Preferably without meat & something that I can just throw into a crock pot (or not).

Just made one this morning!

16 Bean Soup (As found on the back of the Goya 16 Bean Soup Mix Package)

  • 1 lb. Goya 16 Bean Soup Mix
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1 large carrot, chopped
  • 1 packet of Goya Ham Concentrate The recipe suggests you can use 2 bouillon cubes instead, so I went and found some healthy veggie bouillon cubes with no MSG or hydrogenated oil.
  • 1 Bay leaf (didn’t have this on hand, but it would be yummy)
  • 2 cloves of garlic, chopped (not called for on the recipe, but I love garlic)
  • Salt and pepper to taste

Soak the beans overnight/all day, then drain. (Alternatively, the recipe suggests you can put the beans in hot water, boil for 2 minutes and then set aside for 1 hour. My roommate tried this method and it didn’t work out that well).

In pot, combine all ingredients with 6 cups of water. Bring to a boil. Reduce, cover, and simmer until the beans are soft. Serves 8 to 10.
